Essai de mise au point d'un ferment pour la production artisanale du Lanhouin, un condiment à base de poisson fermenté au Bénin

- Une étude antérieure sur la production artisanale du Lanhouin au Bénin a montré que la durée des phases de maturation et de fermentation constitue les contraintes majeures soulevées par les productrices. A ceci, s’ajoute la qualité sanitaire douteuse du produit. Pour lever ces contraintes, un ferment de type traditionnel a été mis au point et sa performance testée à travers des essais de fermentation. Les caractéristiques microbiologiques et physico-chimiques des poissons mis en fermentation ont été déterminées conformément aux méthodes standard. Les résultats ont montré au plan microbiologique, que les Micrococcaceae et les Bacillus spp. étaient les principaux microorganismes aussi bien dans le ferment que les Lanhouin obtenus après fermentation. Une bonne aptitude fermentaire du ferment a été établie, se traduisant par une montée rapide du pH des poissons de 6,90 à 7,54 au bout de 24 h de fermentation avec une phase de maturation contre une montée de 6,92 à 7,23 pour le contrôle après 72 h de fermentation avec maturation. Quant aux poissons mis en fermentation sans phase de maturation, mais en présence du ferment, leur pH a évolué de 6,6 à 7,56 au bout de 60 h alors qu'une augmentation moins marquée a été observée pour le témoin dont le pH est passé de 6,5 à 6,97 pour la même durée de fermentation.

- A previous study on the artisanal production of Lanhouin in Benin showed that the duration of ripening and fermentation steps constituted the major constraints raised by the processors. In addition, the safety of the products is doubtful. To overcome these constraints, a traditional starter culture was developed and its performance was tested through fermentation trial. The microbiological and physico-chemical characteristics of the fermenting fish were investigated using standard methods. The results showed that Micrococcaceae and Bacillus spp were the main micro-organisms present in the developed starter culture and the Lanhouin samples obtained after the fermentation trials. A good performance of the starter culture was observed through an increase in pH of fermenting fish samples from 6.9 -7.54 after 24 h of fermentation with the ripening step while an increase from 6.92 to 7.23 was recorded for the control after 72 h of fermentation. As regards the fish fermented without the ripening step, their pH increased from 6.6 to 7.56 after 60 h of fermentation whereas a low increase in pH (6.5 to 6.97) was observed after the same fermentation time for the control.
