  • Le manioc fait partie des principales plantes à racines amylacées cultivées dans le monde. Au Benin, le manioc est consommé par la majorité de la population, plus particulièrement dans le Centre et le Sud en complément du maïs. La plus grande partie des racines de manioc produite est transformée par les femmes. Ces dernières s’associent pour la plupart du temps en groupement et transforment le manioc selon les technologies artisanales utilisant peu ou pas d’équipements mécaniques. Ce mode de transformation est destiné essentiellement à la fabrication des dérivés alimentaires avec en tête le gari (65% des récoltes). Une enquête a été faite auprès de 121 groupements et 225 transformatrices individuelles dans les grandes zones de transformation du manioc en gari au Bénin. Le test de comparaison des moyennes (ANOVA) a été fait. L’analyse des données relatives à la transformation du manioc en gari a montré que cette activité est pratiquée toute l’année. Quel que soit le système de transformation adopté par les groupements, elles y consacraient 08 à 10 mois de l’année. En comparant les quantités de manioc traitées par an, les groupements utilisaient le système traditionnel doublé de la presse transforment en moyenne 221 tonnes de manioc par an tandis que ceux utilisant le système traditionnel renforcé par la râpeuse transformaient en moyenne 67 tonnes de manioc contre 66 tonnes par an pour le système traditionnel pure et 57 tonnes environ pour le système traditionnel avec presse et râpeuse.

  • Cassava is one of the main starchy root crops grown in the world. In Benin, it is consumed by the majority of the population, especially in the Center and the South in addition to maize. Most of the cassava roots produced are processed by women. The latter usually associate for the most part in grouping and transform cassava according to artisanal technologies using little or no mechanical equipment. This method of processing is mainly used in the manufacture of food derivatives, with gari (65% of harvests). A total of 121 clusters and 225 individual processors were surveyed in the large processing areas of cassava in gari in Benin. The Averages Comparison Test (ANOVA) was conducted. The analysis of data on the transformation of cassava into gari has shown that this activity is practiced throughout the year. Whatever the processing system adopted by the groups, they devoted 8 to 10 months of the year. When comparing the quantities of manioc processed per year, the groups using the traditional doubled press system processed an average of 221 tons of cassava per year, while those using the traditional rasp-reinforced system transformed average 67 tons of manioc against 66 tons per year for the traditional pure system and about 57 tons for the traditional system with rough press.
