Effets de deux méthodes de cuisson sur la concentration des métaux lourds dans la chair des escargots géants Africains comestibles de la vallée de l’Ouémé au sud-est du Bénin

- La chair des escargots de la famille des Achatinidae est très appréciée par les populations du Bénin. Toutefois, ces escargots géants Africains ont la capacité d’absorber et de concentrer dans leur organisme certaines substances chimiques toxiques comme les métaux lourds. L’étude vise à évaluer l’effet des méthodes de cuisson des populations sur les concentrations de métaux lourds dans la chair de Archachatina marginata et Limicolaria spp, deux espèces d’escargots comestibles collectés dans la vallée de l’Ouémé au sud-est du Bénin. La voltampérométrie inverse a été la méthode d’analyse utilisée pour le dosage du cadmium (Cd) et du plomb (Pb), deux métaux lourds dans la chair des échantillons des espèces Archachatina marginata et Limicolaria spp. Les résultats ont montré que les concentrations de cadmium ont augmenté du cru au frit tandis que les concentrations de plomb ont diminué du cru au frit dans la chair de chacune des deux espèces d’escargots géants Africains. Ainsi, les deux méthodes de transformation (ébullition et friture) de la chair des escargots géants Africains ont un effet positif sur la réduction du plomb et un effet négatif sur la réduction du cadmium. Par conséquent, les populations doivent consommer les chairs des escargots géants Africains avec modération mais en privilégiant la forme frite à la forme bouillie.

- The flesh of snails of the Achatinidae family is highly appreciated by populations of Benin. However, these African giant snails have the ability to absorb and concentrate in their body some toxic chemicals such as heavy metals. The study aims at evaluating the effect of the cooking methods of the populations on the concentrations of heavy metals in Archachatina marginata and Limicolaria spp, two species of edible African giant snails collected in the valley of Ouémé. The reverse voltammetry was the analytical method used for the determination of cadmium (Cd) and lead (Pb), the two heavy metals in samples of the species Archachatina marginata and Limicolaria spp. The results showed that cadmium concentrations increase from raw to fried while lead concentrations decrease from raw to fried in each flesh of the two African giant snail species. Thus the two transformation methods (boiling and frying) have a positive effect on the reduction of lead in snails and a negative effect on the reduction of cadmium in the flesh of African giant snails. Therefore the populations must consume the flesh of these African giant snail species in moderation by favoring the fried form to the boiled form.
