  • Les rendements en carcasse et en viande ainsi que la composition nutritionnelle et minérale de l’ensemble cuisse + jambe, du bréchet et des abats utiles (cœur, foie, rate) de 12 francolins communs mâles et 12 francolins communs femelles ont été déterminés. De façon générale, les valeurs pondérales moyennes des différentes parties de la carcasse des francolins communs mâles sont plus élevées que celles des francolins communs femelles.   • Carcass yield, meat yield, nutritional and mineral compositions of the whole thigh + leg, the breast and useful offal’s (heart, liver, spleen) of 12 male bush fowls and 12 female bush fowls have been determined. Generally the mean weights of different parts of the carcass male bush fowls are higher than those of female bush fowls. Carcass yield and meat yield of females are respectively 67,1 and 59,8 %.
