  • Le niébé est une légumineuse fréquemment consommée au Bénin à cause de sa richesse en protéines. Une des formes courantes de transformation de niébé est le ‘’atta’’ en langue fon. Cette étude évalue les différentes techniques de transformation traditionnelle du niébé en ‘’atta’’ et indique les meilleures techniques de transformation.
