  • La tomate (Lycopersicon esculentum) fait partie des légumes les plus consommés au Bénin et a la particularité d’être très périssable du fait de sa forte teneur en eau. L’objectif de l’étude était de valoriserla tomate sous forme séchée. Huit lots de 115g de tomate var. Akikon ont été soumis chacun à un prétraitement spécifique (T1 à T8) mettant en exergue simultanément les mécanismes de blanchiment et de déshydratation osmotique avec différents solutés.Les tomates ont été séchées à l’étuve à 45°C pendant 16h. Des essais de reconstitution dans l’eau chaude (1) à 100°C et dans l’eau à la température ambiante (2) ont été conduits.Les tomates reconstituées ont été moulues. Les tomates séchées et les tomates transformées en purées ont été évaluées au sein d’un panel de 10 dégustateurs formés. Le test de Student-Newman-Kheul était utilisé pour comparer les teneurs moyennes de la matière sèche de la tomate aprèsles différents prétraitements.Les résultats obtenus ont indiqué une différente significative (p<0,05) entre les matières sèches des tomates ayant subi différents prétraitements avant le séchage. Le prétraitement T7 (trempage dans 5 L d’eau bouillante + 135 g de sel + 37,5 g d’huile de palme) a été la meilleure méthode de traitement au regard de la texture et de la couleur attrayant de la tomate séchée (caractéristique appréciée par 80% des dégustateurs) et de la forte perte d’eau dans la tomate séchée avec une teneur enmatière sèche de 73,67% ± 0,86 au bout de 16h de séchage. Les résultats de reconstitution de la tomate séchée en purée ont été concluants surtout après l’immersion des tranches de tomates séchées dans l’eau chaude qui a été plus rapide (30 min) comparativement à l’usage de l’eau à la température ambiante (1 h). La purée de tomate obtenue dans les deux cas a été appréciée par 100% du panel de dégustation.

  • Tomato (Lycopersicon esculentum) is one of the most consumed vegetables in Bénin and has the particularity to be very perishable. The study aimed to evaluate another way to valorize fresh tomato into dried tomato. Eight different groups of local tomato variety locally named Akikon have been submitted to a specific pretreatment(T1 to T8) highlighting different mechanism (bleaching, osmotic dehydration). Samples were dried in stove at 45 °C for 16 hours. Trials for rehydration of dried tomatoes are made by immersion in hot water (1) at 100 °C and in water at room temperature (2). The rehydrated tomato is ground into puree.Dried tomato and puree were evaluated by a panel of 10 trained panelists. Student-Newman-Kheul test was used to compare average dry matter content after the different pretreatments. Results showed up a significant (p<0.05) difference between dried matters from the different pretreated samples. The T7 treatment (Immersion in 5 L of water + 135 g of salt + 37.5 g of palm oil) was the best method (80% of panelists) due to the quality of dried tomatoes (texture and color) and the relative high retrieval of water from the product after 16 h of drying process with a dried matter of 73.67% ± 0.86. The results of reconstitution were convincing, especially after immersion of dried tomatoes in hot water that last 30 mn compared to water ambient room temperature (1 h). Puree obtained in both cases was appreciated by 100% of the panelists.
